Sensitive and concerned about his terroir, the Earth in general and the energies surrounding it, Guillaume decided a few years ago to convert to organic and biodynamic viticulture. Since the beginning of his conversion, his vines have been cultivated without the use of synthetic chemicals. Thanks to grass cover and the addition of natural compost, the soil is in perfect balance.

It's also for this reason that Guillaume proposes an educational hike that will take you right up to this hotel of little living creatures. As an added bonus, this superb view is one of the jewels in the crown of the Vallée de La Marne Ouest.
